As I did not have University I decided that this would be the best time to get back into baking and get some practice in by making the easiest vanilla cupcakes, as well as experimenting and altering them slightly!

- 4 eggs

I used a food processor to mix everything together, but it is also fine to use an electric whisk or manually mix (but these do not turn out as well as when using a food processor). In order to alter the cupcakes you can switch up the flavouring and add strawberry or salted caramel flavouring to replace the vanilla extract, or even add in some cocoa powder to make the cupcakes chocolate.
Before beginning remember to set your oven to 180 Celsius or the equivalent to allow for the oven to heat up before placing in your cupcakes to bake. First of all place your butter, sugar and flour into the food processor and mix until well blended together. Then, one by one, add in your eggs pulsing the food processor to mix, before finally adding in your flavouring (vanilla extract if you are keeping them plain and simple). This would also be the time that you would need to add any flavouring or additions such as chocolate chips into the mixture. You can also add in food colouring if you so wish at this stage.
After you have created your mixture spoon into your cupcake cases that you will have placed into the cupcake baking tray. I used roughly two and a half teaspoons of mixture in each case (about halfway up the case). When all of your mixture has been spread evenly amongst your cases place in the over for between 14 and 16 minutes.
When the cupcakes have become golden brown or have cooked all the way through (check by placing in a metal skewer, if the skewer comes out clean then they are done!) take them out of the oven and place on some cooling racks.
When cool put whatever icing you want on them and then you are good to eat then. I decided to attempt at making marshmallow fondant and did this by putting 500g of marshmallows and 5ml of water into a microwaveable bowl and heated for around 2 minutes. I then added around 1kg of icing sugar slowly and in stages, mixing until the mixture became and stiff dough like consistency. I was then able to roll this out and place onto the cupcakes or transfer and smooth over onto the cupcakes,
As you can see I sprinkled some icing sugar over the top to finish them off. Although they do not look like the neatest cupcakes I have ever made they were still very tasty! I tried out by doing vanilla cupcakes, strawberry cupcakes, salted caramel cupcakes, marbled cupcakes, crazy coloured cupcakes, chocolate cupcakes and finally vanilla chocolate chip cupcakes.
