Carrot cake cupcakes are so easy to make and are easier to share out if there is a large group of people that you are catering for. I made these for my cousin’s Hen weekend as part of the ‘afternoon tea’ afternoon that was planned.
All you need is grated carrots, orange zest, wholemeal self raising flour, normal self raising flour, light brown sugar, bicarbonate of soda, mixed spice, 2 eggs, sunflower oil, butter, soft cheese, icing sugar and vanilla extract.
You basically add all of the ingredients for the actual cupcakes, so everything but the butter, soft cheese, icing sugar and vanilla extract into a bowl and mix until well binded, before placing the mixture into cupcake cases.
Bake the cakes at 180C for 20 to 22 minutes or until a skewer comes out clean.
For the icing you beat the butter until light and fluffy, before adding in the soft cheese, vanilla extract and icing sugar with an electric whisk. Then spread the icing over the top of the cupcakes and I finished with placing a white chocolate carrot on top of each cake.
