Lemon drizzle cake is one of my favourites to bake and of course eat as it is so easy and simple, but still tastes great!
All you need for these delicious and moist cupcakes is…
250g self-raising flour
250g caster sugar (+150g for the drizzle)
2 zest and juice of lemons
1 juice of an orange (for the drizzle)
First of all you will need to preheat your oven to 160 degrees Celsius. Place all of the measured ingredients for the cupcakes into a mixing bowl and use an electric whisk to combine into a smooth and light mixture. Place equally into 12 cupcake cases in a cupcake tray and bake for around 30 minutes or until a skewer comes out clean.
Wait for the cupcakes to cool for about 10 minutes and transfer onto wire cooling racks. Mix the remaining caster sugar and orange juice together before spooning over the cupcakes which you will have poked small holes in using the skewer to allow for the drizzle to seep down into the cakes whilst also creating a crunchy sugary topping.
